One Pan Meal

Sheep Pan Cashew Chicken
Ingredients:
1 and 1/2 lbs Chicken Breast
12 oz Fresh Broccoli
1 Red Pepper
90 grams cashews
2 Tlbs olive oil extra virgin
Salt & Pepper
Ingredients: Sauce
1/2 Cup Coconut Aminos
1 Tlbs Apple Cider Vinegar
1 Tlbs Minced Garlic
Juice from Half a Lime
1 tsp Sesame Oil
1/4 tsp crushed Red Pepper Flakes
Instructions:
Preheat over to 425 degrees.
Combine the sauce ingredients together in a bowl and whisk. Set aside for later.
Slice the bell pepper, mince the garlic and dice the chicken into small cubes.
On a baking sheet, place chicken in a single layer on one side of the sheet. Then place the bell peppers in a single layer on the sheet and the same for the broccoli.
Cover every thing with salt & pepper. Than drizzle olive oil over the bell peppers and broccoli.
Drizzle half the sauce over the chicken and sauce the rest for later.
Bake 10 Minutes.
Remove the baking sheet flip chicken so it's not sticking together.
Add cashews to the pan and bake additional 5 minutes.
Remove the baking sheet from over, make sure chicken is cooked.
Serve over rice and drizzle the remaining sauce over everything before you serve. You can also sub with zoodles.
