No Bake Cheesecake Delights

Healthy Vegan No Bake Cheesecake Bites.

Ingredients: Crust

  • 3/4 Cup (4oz) Pitted Dates

  • 3/4 Cup Pecans

  • 2/3 Cups Unsweetened Shredded Coconut

  • 1 Tlbs Lemon Zest

Ingredients: Filling

  • 2 Cups Raw Cashews, soaked 4 hrs or overnight than drained

  • 1 Cup Coconut Cream click here

  • 1/4 Cup Refined Coconut Oil

  • 1/2 Cup Pure Maple Syrup

  • 4 Tlbs Lemon Zest (3 Lg lemons)

  • 1/4 Cup Lemon Juice (1 lemon)

  • Pinch of Salt




Instructions: Prepare Crust

  1. Add all ingredients into food processor until sticky and crumb texture

  2. Transfer crust into 8x8 baking dish or evenly into Silicone muffin cups

  3. Using your hands, firmly press crust evenly into the bottom of dish

  4. Chill in fridge while preparing filling

Instructions: Filling

  1. Add all ingredients for filling into a Blender or Vitamix and blend until creamy and smooth

  2. Remove crust from fridge and pour the mixture on top of the crust and spread evenly with spatula

  3. Chill in fridge, while you prepare toppings or skip this step and leave it plain

  4. Put cheesecake dish in freezer for approx 2 hours or until harden

  5. When ready to serve, leave out for 5 minutes to soften slightly to cut.

  6. Enjoy !

Topping Options

Add just a bit more to the tops. Do it before the cheesecake goes in the freezer.

Ingredients:

  • Mini Choc. Chips

  • Mini PB & Choc. Chips

  • Crushed Peanuts or nut of your choice

  • Fresh chopped fruit

  • Chocolate Fudge

  • Cookie Crums

  • Sprinkles

Ingredients:

  • 1 Cup of berries (pic

Fruit Swirl Topping

Ingredients:

  • 1 Cup of berries (pick once type or mix of blueberries or strawberries or raspberries)

  • 2 Tlbs Coconut Cream

  • 1/3 Cup of Raw Soadked Cashews

  • 2 Tlbs Pure Maple Syrup

Instructions:

  1. Add all ingredients for swirl to food processor and puree

  2. Drizzle the swirl on top cheesecake filling

  3. Using the tip of a sharp knife to make swirl pattern (be sure to stay on the surface)











Storage:

Keep Frozen in a air tightly container.
